Every week on Rise and Radke (which is a morning show I do with David for all those in our Radke Family Membership) we dedicate Thursday’s to our favorite things. We call it Thursday Things and we show our viewers what it is we are loving at the moment.
I love Thursday Things because not only do we share what we are loving - but our members get to share what they love, as well. Thanks to them I’m out like $500 on Amazon for things I love but, definitely, do not need.
Oh well, money grows on trees, am I right? (Said no one, ever.)
One of the things I shared with them a few weeks ago bears repeating here on this Stretch Marks email. Now please keep in mind that while I’m writing this article I am intermittent fasting...in other words, I’m hungry. Actually, I’m HANGRY. So maybe I would love this a little less if my stomach wasn’t growling. But at this exact moment I’d give my right arm to eat it, and so for that reason alone that means it’s worthy of talking about right here and now.
So without further ado...
There is nothing I like more than dip & seasoning packages. Want to show me you love me? Buy me a package that says “mix with one block of cream cheese, one cup of cheddar cheese and half a pound of bacon.” I’m yours forever!
So when I went into a gourmet kitchen store last summer I grabbed a couple of those packages that you can mix up as either a last minute dip for game night, or you can use as a marinade. Either way, win/win. Now the back of the package said that all you needed to do was mix with olive oil and wait about 30 minutes before serving with bread or crackers. So that’s exactly what I did. I served it at a family get-together and everyone loved it! What was it? Where did I get it? Where could they get it? The questions were flying.
I love it when my dip is a hit at a party!
But imagine my surprise when I read that it could also be used as a marinade. Thankfully I had purchased two packages because the other night I used it as a marinade…AND Y’ALL! I’m about to give you the recipe and at the bottom of this email. I’ll also attach a picture of the marinade, because guess what? Its on Amazon! And now I’ve saved your summer.
Here’s what I did…
I took a whole fryer chicken, picked out the gross insides and washed the chicken off really good. Then I patted it dry with a paper towel.
I rubbed the fryer down with Olive Oil. (You can also use an Olive Oil spray which is much less messy.)
Then I seasoned the chicken with the package of seasoning. I added a little salt and pepper, but not much because the seasoning can be a little salty if you’re not careful.
I made sure to get the chicken good and covered. Deliciousness!
Then I placed my fyer, breast side down, in my air fryer. I cooked it on 400 for 30 minutes. But if you’re air fryer cooks hotter than my old one, check it on occasion. (No one likes burnt chicken.)
After 30 minutes flip it and cook it on 400 for the last 30 minutes. Just make sure it’s cooked thoroughly. (No one likes pink chicken.)
Then take it out and make a complete mess cutting it up for your family, because cutting a chicken is HARD and I suck at it. I served mine with potatoes and green beans. But there was so much left I was able to cut it up the next afternoon and put it on a salad.
Allow me to introduce you to Salt Sisters. You can find them on Amazon. They have so many different flavors to try and I intend on making my way through every last one of them. But until then, I used the Salsa di Parma on my chicken and I used the Charmane’s Bread Dip as a dip. Both were awesome!! I cannot wait to try their Blackening Cajun and their Garlicky Wild Mushroom.
There are, of course, a million different ways to season a rotisserie chicken – but I wouldn’t be sharing this seasoning package with you if it weren’t sooooo good. Good enough that I may or may not have bought several of them from Amazon so that I never run out.
